3/4 Cup White Sugar
1 Cup Peanut Butter We prefer creamy.
1 Egg
1 Egg Yolk
3/4 Teaspoon Kosher Salt
3/4 Teaspoon Baking Soda
3 Cups Flour

Peanut Butter Yums

Preheat oven to 350 degrees and line baking sheet with parchment paper.

In a large bowl, beat the butter, brown sugar, and the granulated white sugar together until the mixture is light and fluffy - about 3 minutes.

Add the whole egg, egg yolk, and peanut butter, continue to mix until thoroughly blended.

In a separate bowl - mix the salt, baking soda, and flour. Then, slowly pour into the peanut butter mixture. Stir until well combined.

Pour some sugar onto a plate or into a small bowl. For each cookie, roll 1 tablespoon of dough into a ball and then roll it in the granulated sugar so that it is covered in sugar. Place the dough ball onto the baking sheet. Slightly compress with a flat bottomed cup or use a fork if you want grid lines in your cookie.

Bake at 350 degrees for 10 minutes. Remove from the baking sheet and let cool on a wire rack.
