Why purchase tomato sauce when it is so easy to make and absolutely delicious when fresh! You can make this sauce in about the time it takes to boil water for your pasta or allow your dough to rise for pizza.

Warm 2 tablespoons of olive oil with the garlic in a medium skillet over medium-low heat. Cook, stirring occasionally, until the garlic is lightly golden.

Add the two cans of diced tomatoes to the skillet, along with basil and salt & pepper to taste.

Raise the heat to medium-high and cook, stirring occasionally, until tomatoes break down and the mixture becomes "saucy," about 10 minutes.

Stir in the remaining 1 tablespoon of olive oil and then taste it. Add more salt if necessary. Serve immediately or cover and refrigerate for a day or two. May also be frozen in a container for several weeks.
